My favourite Sunday breakfast: Pancakes. Who doesn't love them?
My super clean version uses whole foods, including a Kiwi favourite, to create a delicious, nourishing version of the classic pancake.
Feijoa Pancakes
4 eggs
1 banana
2 Tbspn mashed feijoas (or berries)
1 Tbspn coconut flour
Tsp baking powder
Blend all ingredients together. Cook in coconut oil (or a non-stick pan) on a medium heat for a minute or so on each side.
Finish with a drizzle of maple syrup and some Cathedral Cove Coconut Yoghurt! Yum
